An easy to make healthy snack which needs no cooking so a great half term activity for the kids
to do. It’s Gluten and Dairy free as long as you use the appropriate chocolate substitute for the
topping.
Ingredients
100g of dates or a tablespoon of date paste; tablespoon of crunchy peanut butter; tablespoon of
honey; 150g of rolled (porridge) oats; baking parchment; plain chocolate or dietary substitute.
Method
1 The dates need to be turned into paste. Sticky Betty doesn’t have a food processor so she
soaked the dates in hot water for 10 minutes then strained the water off. Then she used a soup
zizzer on them but a fork would have worked.
2 Put the date paste, honey and peanut butter in a bowl and mix them together.
3 Add the oats and stir until they are coated. This should be a very thick mixture. If it’s not add
more oats.
4 Put the baking parchment on a baking tin, then the mixture and then another piece of baking
parchment.
5 Use your hands or a rolling pin to flatten the mixture until it’ just under a centimetre thick.
Remove the top piece of parchment and place the tin in the fridge for an hour.
6 Melt the chocolate (or substitute) in a bowl over some hot water. Take the tin from the fridge
and pour the chocolate over the top. Smooth it across the oaty mixture.
7 Return to fridge for another hour then cut into squares or fingers and eat.
