There are days (usually Sunday to Saturday inclusive) when Sticky Betty knows she has eaten
too much sweet stuff. This is a lovely breakfast or dessert for just those occasions.

Ingredients
Cucumber, natural fat free yoghurt, some brown sugar or honey or syrup.

Method
1 Cut one very thin slice per serving from the cucumber and put it aside to use as a garnish.
2. Cut the skin off the cucumber. Sticky Betty uses about 4”/10cm of cucumber per serving.
3. Chop the peeled cucumber into small chunks and put in a bowl. Add 3 tablespoons of
natural, fat free yoghrurt and stir until the cucumber is coaterd.
4. Spoon the mixture into a small dish. Scatter a little brown sugar or swirl some honey or
syrup over the top.
5. Take the thin slice of cucumber you put aside earlier. Make a cut from the edge to the
middle then twist the slice and arrange on the top of the yoghurt as a garnish.
