When Sticky Betty's Aunty June asked for Frizzly Dick for supper, no-one knew what she
wanted but they asked for the recipe which is a great way to use up the stale bits of cheese,
ham and anything else lying about after Christmas. Aunty June was in her 80s & suffering with
dementia so whether the name is a memory from the 1930s or the imagination of illness, we’ll
never know.

Ingredients
Cheese
You can add any or none of the following: chopped onions, ham, cooked bacon, cooked
mushrooms, sliced tomato.
Thick slices of bread/toast.
You will need a metal/enamel plate or pan and an oven glove or tea towel as the plate will get
very hot.

Method
1 Grate or slice the cheese and arrange half of it on the bottom of the plate. Scatter any of the
other ingredients EXCEPT the tomatoes if used.
2 Place the plate under a hot grill until the cheese starts to bubble.
3 Carefully take the plate from under the grill – IT WILL BE VERY HOT – and put the rest of the
cheese on top of the melted mixture. If using tomatoes, put them on top of the cheese.
4 Return the plate to under the grill until the cheese is bubbling and golden brown.
5 Use the oven glove to hold the hot plate and scrape out the cheese onto a slice of bread. The
bottom of the plate will be full of buttery juices which can be mopped up with bread
6 If there's any cheese leftover, add to soup or mashed potatoes to give extra flavour.
