- 450g mince
- 1 onion ,peeled and sliced
- 2 garlic cloves, peeled and chopped
- 1 tin of tomatoes
- 8 cherry tomatoes, halved
- half a jar of curry sauce
- Salt and pepper
- large pumpkin ( this was a 2lb spaghetti one )
- Mozzarella cheese ,optional
Preheat oven to 180 C/ 350F / Gas Mark 4
Cut the pumpkin in half lengthways and scrape out seeds, drizzle with olive oil and sprinkle with salt and pepper. . Place cut side down, on a foiled covered baking sheet and roast in the oven for about 40 mins, or until almost soft.
Meanwhile, dry fry the mince, till browned ,then add onions and chopped garlic, cook for a few minutes, add remaining ingredients, except the pumpkin and bring to the boil, then simmer for about 10 mins.
Remove the pumpkin from the oven, place cut side up in a roasting dish, fill with the mince mixture, cover with foil and bake for approx 15 to 20 mins. Uncover the foil ,sprinkle on cheese and return to the oven ,till the cheese has melted.
