Oven baked chickpea burgers

Ingredients

  • 1 onion finely chopped
  • 1 carrot coarsely grated
  • 2 400g tins of chickpeas, drained and rinsed
  • 2 garlic cloves (or ready prepared equivalent)
  • 2 tsp ground cumin
  • 1 tsp chilli powder
  • 3 tsp ground coriander
  • ¼ tsp ground ginger
  • 1 egg
  • Salt
  • Spray oil

Instructions

Step 1

Using a food processor or food chopper, combine the onion, carrot, chickpeas, garlic and spices. Process until blended and chunky, not a paste. If you need to, split the mixture and blend in batches

Step 2

Place the chunky mixture into a mixing bowl. Whisk the egg gently and add to the mixture, season with salt then mix well to ensure the egg is combined. Use your fingers for best results

Step 3

Cover your mixture then refrigerate for approximately 6 hours

Step 4

Preheat the oven to 200C / Gas mark 6

Step 5

Line a baking sheet with baking paper and lightly oil it. Using your hands, shape the chickpea mixture into balls then gently press into a flat burger shapes. Place onto the baking sheet and spray each one lightly with oil

Step 6

Cook in the oven for 1520 minutes or until golden and firm

Step 7

Serve in buns or with salad and natural yoghurt

 

*Leave as bitesize balls to create falafels you can use for a snack or packed lunch. You can add different vegetables to the mix, grated courgette works well. Squeeze as much moisture as possible out of the courgette once its grated to stop the mixture becoming too loose*
