Sticky Betty’s Blackberry Cordial

Ingredients
- 500g blackberries
- 100 to 150g sugar, to taste
Preparation

Step 1
Rinse the blackberries in cold water.

Step 2
Put the blackberries in a saucepan with enough water to just cover the fruit and slowly bring to the boil. Simmer for about 10 minutes or until the blackberries are soft.

Strain the liquid off into a jug and put the blackberries in a bowl.

Give the saucepan a quick rinse and pour the blackberry juice into it.

Heat gently and when hot (but not boiling), add sugar and stir until it’s dissolved. You’ll need to add the sugar one spoon at a time and keep tasting until you’re happy.

Take the cordial off the heat and let it cool down until you drink it or freeze it.

About the blackberries in the bowl – of course, you can put them on a compost pile or into a food caddy, but you could stir in some sugar or honey and add it to yoghurt or use it to top a dish of ice cream.
