Cranberry Bread and Butter Pudding

Comforting, simple and full of old-fashioned charm, this bread pudding is a lovely way to turn everyday ingredients into a warm and satisfying dessert. Soft, sweet and easy to adapt with dried fruit and fresh berries, it is the kind of homely recipe that feels both thrifty and delicious.

Ingredients

  • 4 or 5 slices of buttered bread — Cut into small squares
  • 3 eggs
  • 250ml milk
  • 2 tablespoons sugar
  • handful of dried cranberries — Optional – you can use any dried fruit

Preparation

  1. Step 1

    Arrange the bread and butter in an oven proof dish and scatter with dried cranberries.

  2. Step 2

    Beat the eggs and sugar together in a bowl.

  3. Step 3

    Heat the milk and almost at the boil then pour into the eggs, beating all the time.

  4. Step 4

    Pour the egg and milk mixture over the bread. Put the dish on an oven tray to catch any spills and bake until set. About 30 mins at 180°C.

  5. Step 5

    Serve hot or cold. Sticky Betty showed off by adding strawberries and blueberries and serving with ice cream.
